Kale is king

I bought the curly kale at market yesterday, but the dinosaur kale is from last Tuesday. Kale can be kept fresh by trimming the ends and placing the stems upright in about an inch of water. I use a glass beer pitcher, which holds a big bunch of kale, cover the top of the pitcher with a plastic bag and change the water every few days.

and it provides migrating birds with nourishment. Plant outside a window and enjoy the lively, enhanced view.

I trim the young (baby) leaves and use them in salads. If I let the plants mature they usually begin to bolt by mid-June.
