What's for Dinner, Sun., April 27, 2025

Last edited Sun Apr 27, 2025, 06:18 PM - Edit history (1)

I'm using refrigerator items up while I clean both the utility room and the kitchen refrigerator. So far I've made:

--ham salad, using last bit of ham from Easter. Was quite delicious on a pita bread and also a miniature cornbread loaf.

--Persian cucumber and cherry tomato salad with onion. On this one I don't even use dressing because the vegetable mixture makes its own.

--fruit milkshakes (strawberry, blueberry, banana)

That's it so far, but I still have 4 or 5 hours to work on it. By this evening I hope to have clean shelves and drawers.

In addition, I have another gallon of kombucha to bottle: cherry flavor. Maybe a few ginger.

Not Boston baked beans, but something off the internet that I adapted to use the ground beef/onion/tomato mix I already canned (aka Hamburger Slop). More onions, garlic, salt pork, herbs, etc. Sort of Provencal seasoning.

The carrots are my first test of the carrots I've canned with the single hot pepper. I'll just heat them with some thyme butter from the freezer.

We'll see if any of it is edible. So far, it smells good. If the carrots are acceptable, I'll can more of them.

if a little softer than I make them normally. It's surprising how spicy tucking one small pepper, unbroken, into the center of the jar can make them.

The beans are also ok, but I think they'll be better on reheat served over rice. They could use a little cheese or something for topping.
