Fish in parchment paper/foil with vegetables. I put this in my slow cooker and it's ready in time for dinner. Plus no mess.
I used flounder with herbs from the garden: dill, thyme, and oregano. The vegetables are sliced Campari tomatoes, fennel, baby bok choy, sliced red potato, scallions with the greens, and olive oil. Also black peppercorns.
Tossed green salad with cucumbers and celery. French dressing. Chia seed topping.
Kombucha: ginger.
Dessert: I don't get any tonight because I had a double serving last night.

(1,634 posts)Steam-fried in evoo and veggie broth: chopped onion, orange bell pepper, sliced carrots, cut asparagus, sliced mushrooms and minced garlic. When done I tossed the veggies with whole wheat spaghetti and vegan butter. On top I crumbled a few strips of vegan bacon and parmesan. Cheers!🥂
