What's for Dinner, Tues., July 14, 2026

Ninety-degrees here, so I'm taking the easy way out and having a slice of lasagna that I picked up at the Whole Foods prepared food section

Salad is already prepared--just the usual tossed green salad with tomatoes, peppers, cucumber and onions.

The one vegetable recipe I'm making is zucchini with goat cheese and mint.

Peach kombucha.

Watermelon for dessert.

1. Meatloaf, vegetables

While the meatloaf was baking, I cooked some green beans with onions, and added a cooked potato to reheat. In another pan, I sauteed some zuchinni, mushrooms and onion with seasonings. Lots of good flavors.

Had a fresh peach for dessert.

I love meatloaf. It’s one of those dishes that has a thousand variations and they’re all great.

There's a carcass making chicken juice on the stove and the rolls are rising in the garage. Life is good.

We’re anchored in Oyster Bay Long Island and the First Mate froze a bunch of food before we departed. The catfish was on tonight’s menu.

Catfish filets egged and breadcrumbed then pan fried to a golden brown. We had two leftover potato pancakes so she refried those and balanced it all with a mixed peppers salad. Chardonnay and ice water of which we drink copious amounts (the water!) while aboard.

Orange slices for dessert.

~ Chicken salad made from last night’s leftover grilled chicken. Added zucchini sautéed with kale, shallots and red pepper. Held it together with a tiny bit of mayo flavored with pan drippings and a citrus marinade. Sprinkled a small amount of 5- Italian cheese blend over the top.

~ Side of green beans with lemon and pepper

~ Plum juice

~ No dessert……yet.

I have Sweet Tea here at home and I picked up at Culvers a favorite of mine, their fish diner and 6 jumbo shrimp...extra tarter sauce please...

Lentils cooked in veggie broth, tomato sauce, minced onions and garlic. Midway through cooking I added cumin, turmeric, garam masala, and coriander. Served with oven roasted seasoned string beans and brown basmati rice. Cheers!🥂
