I want to make soup with left over chicken fajita meat. Help. [View all]

Our local Mexican Restaurant is good, cheap and the portions are huge. I’m thinking of putting a big portion of the chicken meat and the accompanying veggies in a pot and add lots of chicken broth. Good Idea? Any suggestions would be appreciated. I have a bad habit of making easy things hard.
